Menu Planning Monday



It has been awhile since I've done a Menu Plan Monday post but I'm hoping that this regular post will not only help keep me accountable but it will help to encourage you and give you ideas. I would love it if you would share your menu plan with us (in the comments section) each week as well

Every Most Sunday nights, my husband and I sit down and go over our week.  We look at who's going to be where, what things we need to get done and what we will be eating for the week.  Since my husband is the one that is home for dinner every night, he gets to be part of this plan.  He says that planning our menu for the week is the most useful thing that he doesn't like doing.  He doesn't really want to do it on Sunday nights but finds himself very thankful during the week!

Sunday: Dinner with my husband's parents - roast, mashed potatoes, and more - yum, yum, yum!!

Monday: Breakfast for Dinner - Pancakes and Eggs
**We have LOTS of eggs from last week's sale!!

Tuesday: Beef and Cheese Burritos.
**I will be doing a little freezer cooking/cooking ahead on Tuesday night as well - Beef and Cheese Burritos (I always make extras when I make this), Cheesy Chicken Bundles and Taco Soup.

Wednesday: Taco Soup.

Thursday: Cheesy Chicken Bundles.
**Chicken and Cheese are both on sale at Meijer this week!

Friday: Sandwiches - It's ok to have a simple lunch for dinner type meal.  Probably grilled cheese

Saturday: Turkey and Mashed Potatoes
**I will be making my very first turkey!! We bought a turkey at Thanksgiving and plan to cook it and fill the freezer with a bunch of meals - Turkey Enchiladas, Turkey Pot Pie, Turkey Noodle Casserole, Turkey Chili.....any other ideas for me?

We have been working on making freezer breakfast meals like breakfast biscuit sandwiches and breakfast burritos,so easy so tasty.Also toying with the idea of cooking whole chicken and cut it up for other meals like with your turkey. Loving my copy of "Cook for a day eat for a month, Frozen Assets" by Deborah Taylor Hough. I got it from the k-zoo library..one of the better freezer cook books for me.
